Breakfast cookies, Chia Seeds, Banana

These cookies are packed with whole food ingredients making them a great choice for your busy morning.  Whole grains and seeds provide an energy boost while bananas add the touch of sweetness needed to please your pickiest eaters.

  • 1 1/4 cups large rolled oats
  • 1/2 cup coconut flakes (unsweetened)
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 3/4 cup oat flour (or whole wheat flour)
  • 2 tablespoons ground flax
  • 2 tablespoons chia seeds
  • 1/4 cup pumpkin seeds
  • 1/2 cup chocolate chips, raisins or cranberries
  • 3  bananas, mashed
  • 1/4 cup nut butter of your choice or coconut or vegetable oil
  • 1 teaspoon vanilla extract


  1. Mix dry ingredients in large bowl.
  2. In separate bowl, mash banana and mix in oil and vanilla.
  3. Pour wet ingredients over dry and mix until just moistened.
  4. Preheat oven to 350 F.
  5. Lightly grease two cookie sheets.
  6. Spoon heaping spoonful of dough onto cookie sheet leaving 1” between.
  7. Lightly flatten cookies using moistened fingertips.
  8. Bake cookies for 20-25 minutes or until lightly browned.
  9. Allow to cool on pan for 10 minutes.
  10. Will stay fresh for 1 week in an airtight container. Cookies can be frozen for 1-2 months.
