I am in love with baked oatmeal.  I had it for the first time this year at my friend Heidi’s with her freshly made apple sauce and I have been obsessed with it since.  So when a friend of mine posted this recipe today for baked oatmeal and I just had to make it.  Rarely do I ever make a recipe without tweaking something and that this recipe called for 1 cup of sugar I knew immediately what I would play around with.  To reduce the sugar I used some softened dates and a small amount of maple syrup.  Here is the final recipe:

wholesome breakfast on the go

  • 1 cup dates
  • 1/4 cup maple syrup
  • 1 1/2 cup milk
  • 2 eggs
  • 1 tsp vanilla
  • 3/4 cup apple sauce or 1 whole apple
  • 3 cups large flake oats
  • 1 tbsp cinnamon
  • 1/2 tsp salt
  • 2 tsp baking soda
  1. Soak dates in hot water until softened and then drain off water.
  2. In a blender place dates, all remaining liquid ingredients and apple and blend until smooth.
  3. In a large bowl, mix oats, cinnamon, salt and baking soda.
  4. Add wet ingredients to dry and fold together until blended.
  5. Allow mixture to sit for 25 minutes until thickened.
  6. Pour mixture into greased muffin tin.
  7. Bake in 350 F oven for 25-30 minutes.
  8. Remove from oven and allow to cool for 10 minutes in pan and then transfer to a cooling rack to cool completely.
  9. Oatmeal can be stored in an airtight container for 4-5 days or frozen for 3 months.
