Chia pudding is one of those breakfasts that brings out your creative self each morning. You make the pudding the night before so it’s ready when you are and then you go to town creating new flavours and colours each morning with your toppings of choice. You deserve to find beauty in your day!
- 2 cups coconut milk
- 1 cup kefir
- 1/2 cup chia seeds
- 2 tbsp maple syrup
- 1 vanilla bean
- pinch of salt
- Mix all ingredients and place in a sealed container.
- Set in refrigerator overnight – shake pudding a few times as the chia seeds are setting up to avoid clumps from forming.
- Pudding can be stored in the fridge for 1 week.
